Salad with Mayonnaise and Balsamic Vinegar Dressing

Sorry for the long hiatus. Shifting around from Melaka to SP really takes me off cooking for awhile (well I still cook, but nothing extra special that I like to share). Got a few stuff lined up (yes I've been busy cooking! :D) so I'll start the entries with salad and balsamic vinegar+mayo dressing.



Salad's great for a simple meal


Salad with Mayonnaise and Balsamic Vinegar Dressing




Ingredients:
Salad leaves of your choice (enough for 3-4 serving)
2 tbsp mayonnaise
3 tbsp olive oil
1/2 tbsp balsamic vinegar
1/2 tsp yellow mustard
1 hard boiled egg, mashed
1 clove of garlic, puréed/grated
1 small onion, diced finely
dash of black pepper
dash of Italian herbs (or any other herbs, optional)


Method:
  1. Soak salad leaves in cold water until leaves are firm. Rinse and dry the leaves as much as possible.
  2. Mix all the dressing ingredients in a bowl.
  3. Put the salad leaves in a large mixing bowl. Pour dressing over salad and toss evenly.
Note:
Serves 3-4. Half the dressing recipe if you're preparing less. Add croutons if preferable.

The thing about salads are, you can put in anything you like. Tomato? Sure. Black olives? Oooo lovely! Cutting down on mayo? Put less of that then. Love potatoes? Toss some boiled ones in then. Add in some meat if you like. Grilled chicken, leftover KFC, or even sausage strips. Or bacon! It can be anything, as long as you like what's in it. Happy experimenting!
